‘Kay, I was being so serious when I said this easy chickpea recipe uses just a few ingredients, and chances are, you’ve already got most of them in your kitchen.

Canned Chickpeas: One thing about me? You’ll probably never catch me cooking chickpeas from dry. They take SO much longer, and canned are just as nutritious and WAY more convenient.

Veggies: I used frozen green beans, bell peppers and red onion, but I’ve also tested this recipe using mushrooms and broccoli and they’re great substitutions!

Healthy Teriyaki Chickpea Stir Fry (With Canned Chickpeas!)

This Healthy Teriyaki Chickpea Stir Fry comes together in just 20 minutes using a few simple ingredients, like canned chickpeas, tons of veggies and my 5-Minute Teriyaki Inspired Stir-Fry Sauce! Enjoy it on it's own or paired with your favorite grain for a delicious, easy meal!

Ingredients
 

  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1/2 red onion, sliced
  • 1 bell pepper, sliced
  • 1 cup green beans, I used frozen
  • 540 ml canned chickpeas, drained and rinsed
  • 1/2 batch 5-Minute Teriyaki Stir Fry Sauce
  • 1/2 lime, juiced

Optional To Serve

  • Cooked rice or noodles

Instructions
 

  • Sauté the red onion and garlic in the sesame oil in a large pan over medium heat until the onion is translucent, which takes about 3-4 minutes.
  • Add the bell pepper and green beans to the pan and sauté for another 2-3 minutes, until they've softened slightly.
  • Add the drained and rinsed chickpeas to the pan and the 5-Minute Teriyaki Inspired Stir Fry Sauce and let simmer with the vegetables and chickpeas until the sauce thickens slightly, which takes about 4-5 minutes. Garnish with lime juice, serve with your grain of choice and enjoy!

Notes

I used frozen green beans in this stir fry, but fresh green beans will also work well!
