This 30-minute Healthy Vegan Sausage & Sweet Potato Sheet Pan Meal with Brussle Sprouts may sound fancy, but it comes together quickly roasted on one pan and is the perfect balance meal! While the sheet pan is roasting, we whip up the Creamy Maple Dijon Dressing to drizzle on top of your vegan sausage and roasted veggies for the easiest one-pan weeknight dinner ever!

Friends, if you’ve never tried a vegan sheet pan dinner, you’re seriously missing out.
Sheet pan meals are some of my favorite easy main dishes because they’re sooo low effort, are super easy to add a source of protein, carbs, and veggies to, which you know I love as a Registered Dietitian, and can be absolutely DELICIOUS.
And this sweet potato and brussel sprout sheet pan meal is no exception!
We use spicy Italian (vegan!) sausage, cubed sweet potatoes and brussel sprouts as the base and roast them all together until they’re fragrant, golden brown and delicious. We drizzle over my delicious Creamy Maple Dijon Salad Dressing for even more flavor and are left with the absolutely perfect easy plant-based meal!

A Couple Of Notes For the Crispiest Results!
Now, I’ve tested this recipe both by slicing the sausage into rounds ahead of time and leaving the sausages whole, and I can confirm that slicing the sausage into rounds makes them a little crispier, but you can totally leave them whole if you’re short on time!
Speaking of crispy, make sure you leave space between the ingredients on the pan to roast! If you overcrowd them, they’ll steam instead of roast, and you won’t get that deliciously golden brown crisp!
Lastly, I’m no stranger to delicious roasted brussel sprout recipes, like my super popular Maple Glazed Carrots and Roasted Brussel Sprouts Recipe, so I tested the brussel sprouts a few ways to get the MAX crispy level, and the best way to do this is to roast them cut side down, since more surface area means more room for browning!

Healthy Vegan Sausage & Sweet Potato Sheet Pan Meal
Ingredients
- 350 g brussel sprouts, quartered
- 1 large sweet potato, diced
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1/2 tsp chili flakes
- 1/4 tsp salt
- 1 tsp dried rosemary
- 1/4 tsp pepper
- 2 vegan sausages, sliced into rounds
- 1 batch Creamy Dijon Maple Dressing
Equipment
- 1 large sheet pan
Instructions
- Preheat your oven to 450 F. Line a baking sheet with parchment paper.
- In a large bowl, toss to combine your chopped sweet potato, brussel sprouts, olive oil, garlic powder, rosemary, salt and pepper. Leave your sliced sausage to the side (we'll add them half way through cooking!).350 g brussel sprouts, 1 large sweet potato, 1 tbsp olive oil, 1 tsp garlic powder, 1/2 tsp chili flakes, 1/4 tsp salt, 1 tsp dried rosemary, 1/4 tsp pepper
- Lay the sweet potato and brussel sprouts evenly on the sheet pan and roast for 12 minutes. Remove from the oven, flip the sweet potato and brussel sprouts, add your sliced sausage to the sheet pan, and roast for another 12 minutes, or until the sweet potatoes are fork tender.2 vegan sausages
- Meanwhile, whisk together the Creamy Maple Dijon Dressing.1 batch Creamy Dijon Maple Dressing
- Once the sheet pan sausage and veggies are done, remove from the oven and plate! Drizzle about 1-2 tbsp of the dressing on top and enjoy!
