Friends, I couldn’t stop eating this vegan green bean recipe straight from the pan, they’re that mouthwateringly delicious.

As a Registered Dietitian and cookbook author, I’m no stranger to sharing super easy and delicious recipes that are veggie-heavy. Still, sometimes you just need a healthy vegetable side dish that’s gonna make you want to eat more veggies, and for those times, there are these Sautéed Green Beans with Garlic.

They couldn’t be easier to make, all coming together in one pan on the stove top, just like my Sautéed Fresh Kale with Garlic and Nutritional Yeast, and they’re packed with garlicky, lemony deliciousness that’s made even better with a sprinkle of nutritional yeast.

Plus, they pair perfectly with my 25-Minute Saucy Lemon Pepper Tofu and can be made at the same time!

Fresh or Frozen, You Choose!

I’ve tested making these garlic green beans both with fresh and frozen beans, and they’re perfect everytime! Honestly, I usually make them with frozen since they’re already washed and destemmed, but use whichever you like better!

Perfectly Cooked Everytime!

My secret to cooking amazing quick sautéed green beans everytime? Cooking them until they’re bright green and juuuuuust cooked enough to be tender, but still leaving some of the crunch!

This usually ends up being close to 7-10 minutes on the stovetop for me, but I recommend checking them starting around 5 minutes just in case!

Easy Sautéed Green Beans with Garlic & Nutritional Yeast

These 15-minute sautéed green beans with garlic and nutritional yeast are hands down one of my favorite healthy vegan side dishes! They’re quick, crunchy, and seriously garlicky, and can be made with both fresh or frozen beans. A little sprinkle of nutritional yeast and lemon juice makes them so cravable you'll want to have them on repeat!

Ingredients
 

  • 2 tbsp olive oil or butter
  • 350 g green beans, destemmed
  • 3 cloves garlic, minced
  • 1/4 tsp salt, or to taste
  • 1/4 tsp pepper, or to taste
  • 1/2 lemon, juiced
  • 2 tbsp nutritional yeast

Instructions
 

  • Heat the olive oil or butter in a large skillet over medium heat.
  • Toss in the green beans, salt and pepper and sauté, stirring occasionally, for 4-5 minutes. Add the minced garlic and continue to sauté until the green beans are bright, tender-crisp, and slightly blistered, for about 8-10 minutes total.
  • Sprinkle with nutritional yeast and and finish with fresh lemon juice and enjoy!

Notes

These are best served fresh, but if you need to store them as leftovers, I recommend doing so in an airtight container for up to 3 days!
