Seriously Easy Honey Garlic Glazed Carrots (Oven-Baked!)

These quick honey garlic carrots are the easiest way to make veggies irresistible! Oven-baked to caramelized perfection in just 40 minutes of mostly hands-off time, they’re a sweet and savory side dish that works for weeknights or holiday meals. A vegetarian side dish everyone will love!

Ingredients
 

  • 10 large carrots, peeled
  • 1/4 cup olive oil
  • 1/3 cup honey
  • 1 lemon, juiced
  • 6 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp freshly ground black pepper

Equipment

  • 1 large sheet pan or other baking dish

Instructions
 

  • Preheat the oven to 425℉. Line a baking sheet with parchment paper.
  • In a small bowl, combine the olive oil, honey, minced garlic, lemon juice, salt and pepper and whisk until well combined.
  • Place the peeled carrots in a large bowl and pour the honey mixture on top. Toss until they're well coated, then lay evenly-spaced on the baking sheet.
  • Bake for 30-45 minutes, depending on how big your carrots are, flipping half way through. The carrots are done cooking when the ends are golden brown and they're fork tender! Feel free to drizzle with a little more honey or top with flaky salt and enjoy!

Notes

Everyone’s oven temperatures are slightly different, so cooking time may vary. I recommend checking these oven roasted carrots every few minutes once you pass the 30 minute mark to make sure that the honey isn’t burning!
Note: Depending on how large your carrots are, this may affect cooking time, too! Keep an eye on them past the 30 minute mark to make sure they don’t burn.
