Healthy Teriyaki Chickpea Stir Fry (With Canned Chickpeas!)

This Healthy Teriyaki Chickpea Stir Fry comes together in just 20 minutes using a few simple ingredients, like canned chickpeas, tons of veggies and my 5-Minute Teriyaki Inspired Stir-Fry Sauce! Enjoy it on it's own or paired with your favorite grain for a delicious, easy meal!

Ingredients

  • 1 tbsp sesame oil
  • 2 cloves garlic minced
  • 1/2 red onion sliced
  • 1 bell pepper sliced
  • 1 cup green beans I used frozen
  • 540 ml canned chickpeas drained and rinsed
  • 1/2 batch 5-Minute Teriyaki Stir Fry Sauce
  • 1/2 lime juiced

Optional To Serve

  • Cooked rice or noodles

Instructions

  • Sauté the red onion and garlic in the sesame oil in a large pan over medium heat until the onion is translucent, which takes about 3-4 minutes.
  • Add the bell pepper and green beans to the pan and sauté for another 2-3 minutes, until they've softened slightly.
  • Add the drained and rinsed chickpeas to the pan and the 5-Minute Teriyaki Inspired Stir Fry Sauce and let simmer with the vegetables and chickpeas until the sauce thickens slightly, which takes about 4-5 minutes. Garnish with lime juice, serve with your grain of choice and enjoy!

Notes

I used frozen green beans in this stir fry, but fresh green beans will also work well!
