Friends, if you want a salad that tastes like street corn, this is it.

No joke, when I was testing this recipe, I couldn’t stop eating it straight from the salad bowl. It’s THAT good.

It’s the kind of recipe you bring to a potluck once, then you’ll start being known as ‘the Mexican street corn salad person’. Which, let’s be honest, definitely isn’t a bad thing!

I tested this corn and black bean salad recipe to perfection to make sure it has some of everything- my smoky chipotle sauce that’s made with tahini and a few other simple ingredients, sweet corn that’s grilled on the pan for ease, hearty black beans straight from the can and tossed with my signature 5-Minute Simple Taco Mix Seasoning, and a creamy, tangy dressing that brings it all together.

Oh, and I know I’m no stranger to quick and healthy main dishes, but did I mention it takes all of 20 minutes to make?! Yeah, I think you’re gonna love this one.

You’ll only need half a batch of my Creamy Chipotle Sauce for this salad, but trust me, you’ll want to make the full amount. It takes these easy Sheet Pan Black Bean Sweet Potato Tacos to the next level with smoky, creamy flavor in every bite!

Frozen or Canned Corn — Both Are Winners!

I’ve tested this recipe using both frozen corn and canned corn in water, and they both work perfectly! Just make sure to drain the water from the canned corn and give it a good rinse if that’s what you’re using!

Creamy Vegan Chipotle Black Bean & Corn Salad (20-Minutes!)

This 20-Minute Creamy Chipotle Black Bean & Corn Salad is bursting with street corn flavor and totally dairy-free! Made with canned black beans, pan-grilled corn, and veggies tossed in my tahini based Creamy Chipotle Sauce, it's perfect on its own or served as a dip with chips!

Ingredients
 

  • 1 tbsp olive oil
  • 540 ml canned black beans, drained and rinsed
  • 2 cups corn kernels, I used frozen
  • 2 tsp Spice Mix
  • 1/2 tsp salt
  • 1/2 batch 5-Minute Healthy, Easy Chipotle Sauce
  • 1 bell pepper diced
  • 1/4 red onion diced
  • 1/2 cup cilantro chopped
  • 1 lime juiced
  • 1 tbsp nutritional yeast
  • 1/2 jalapeno, seeded and diced, optional

Optional to serve

  • Corn chips or lettuce wraps

  • Heat a large pan with the olive oil over medium heat. Add the drained and rinsed black beans, corn kernels and the 5-Minute Simple Taco Mix Seasoning. Sautée for 7-10 minutes, or until the beans just start to crack open and the corn gets a slight char.
  • Meanwhile, make a batch of the 5-Minute Healthy Chipotle Sauce and set aside.
  • In a large bowl, combine the sautéed black beans and corn, bell pepper, red onion, cilantro, lime juice, nutritional yeast, salt and optional jalapeno. Pour the dressing over top and toss well to combine. Serve on its own, with chips or in a lettuce wrap and enjoy!

Notes

You can also make full batch of the 5-Minute Healthy Chipotle Sauce and use the rest as leftovers!
