These Healthy Tofu Fajitas come together in just 25 minutes on the stovetop using extra firm tofu, sliced peppers and onions, and my signature 5-Minute Simple Taco Mix Seasoning for the perfect high-protein weeknight meal!

Friends, I’m a firm believe that we all need a good vegetarian fajita recipe in our back pockets for those nights we just don’t feel like cooking dinner, and these Healthy Tofu Fajitas totally check all the boxes!
They’re quick, easy, and SO delicious, even the meat eaters will love them!
We take strips of extra-firm tofu and coat them in my smoky, slightly spicy 5-Minute Simple Taco Mix Seasoning, which we also use on my Loaded Sweet Potato Nachos!
Then, we add crisp, sweet bell peppers and red onion to the pan to sauté in the spice mix. Once it’s all cooked to perfection, we wrap the mixture in a warm tortilla and top with delicious additions like mashed avocado, fresh salsa, or even my Quick Pickle Red Onions!
The result is the most perfectly balanced vegan fajitas that are packed with protein, fiber and FLAVOR to make this Registered Dietitian very happy!

Do I Need to Press the Tofu Before Using It?
I’ve tested this recipe both pressing the tofu beforehand and not, and I won’t lie, the tofu does come out a little crispier if you press it!
If you have the extra time, feel free to wrap it in a paper towel and place a heavy object on top for 15-20 minutes, like a cast iron pan, to get rid of some of the extra liquid.
But, if I’m being honest, since we’re using extra-firm tofu for these fajitas, pressing it beforehand isn’t really necessary. If I’m not pressing it, I like to wrap the tofu in a paper towel when I take it out of the package and pat it dry.

Optional Toppings for These Veggie Fajitas
Just like my 30-Minute Sheet Pan Black Bean Sweet Potato Tacos, you can add whatever toppings you want to these fajitas! Here are some of my faves:
- A dollop of salsa
- Some sour cream (dairy-free or regular!)
- A sprinkle of cheese, again, dairy-free or regular!
- Creamy mashed avocado
- My delicious Quick Pickle Red Onions
- Fresh cilantro!
- A drizzle of my 5-Minute Healthy, Easy Chipotle Sauce!

The Best Healthy Tofu Fajitas (Vegan!)
Ingredients
- 1 tbsp olive oil
- 350 g extra firm tofu, cut into strips
- 1 tsp garlic powder
- 4 tsp 5-Minute Taco Seasoning Mix
- 1/3 cup water
- 3 bell peppers, sliced
- ½ red onion , sliced
- 1 lime, juiced
- 8 small flour tortillas
Optional Toppings
- Cilantro, vegan sour cream or cheese, salsa, Quick Pickled Red Onion, extra lime juice

Instructions
- Let the olive oil heat in a large pan over medium heat. Once heated, add the tofu strips, and sprinkle 2 tsp of the Taco Seasoning Mix and the garlic powder on top of the tofu. Sauté to combine.
- Let the tofu cook for about 10 minutes, flipping occasionally. Once it's lightly golden brown on most sides, push the tofu to the side of the pan and add the bell peppers and red onion to the pan, alongside 2 more tsp of taco seasoning and the water. Sauté to combine.
- Let the tofu, bell pepper and red onion cook for another 10-15 minutes, until the bell peppers and onions have softened.
- Meanwhile, you can use this time to heat up the flour tortillas if you'd like. I recommend wrapping then in a wet paper towel and microwaving them for about 1 minute to soften them.
- Once the tofu, onion and pepper mixture is done cooking, drizzle the lime juice on top, spoon the mixture into a tortilla, top with your desired toppings and enjoy!
