If craving sweet potatoes is wrong, I don’t want to be right, because I seriously couldn’t stop eating these rosemary garlic roasted sweet potatoes straight from the pan.
They’re perfectly coated in garlicky, rosemary seasoning, slightly crispy on the outside but soft and fluffy on the inside… What else could you ask for in a 25-minute side dish?!
Plus, we use a secret ingredient to make them even more savory tasting… Nutritional yeast! Just a sprinkle of this helps them to have a delicious, umami-packed flavor and totally elevates them. Kinda like adding a sprinkle of parmesan to fries, but dairy-free!
I love making these diced sweet potatoes as meal prep ahead of a busy week, since they’re so perfect for throwing into a bowl or salad to instantly make it more filling, or for snacking on on their own!

The Easiest Ingredients Ever
And only, like, five of them (plus salt and pepper!):
Sweet potato: Duh! The delicious base of this recipe. I kept the skin on for these diced sweet potatoes since it’s where allllll the fiber is, but you do you!
Olive oil: Not too much but not too little makes the sweet potatoes the perfect level of crispiness.
Nutritional yeast: For a slightly cheesy, savory flavor! But if you don’t have nutritional yeast, you can totally still make these sweet potatoes without it.
Garlic Powder: We use garlic powder in this recipe since it coats each piece of sweet potato, but you could use fresh garlic if you prefer! I’d probably recommend 2 cloves of fresh garlic.
Dried Rosemary: Of course! You could use fresh rosemary instead, just triple the amount used!
Salt & Pep: Essential for any recipe!


Time to Roast Some Sweet Potatoes!
I bet you’ve seriously never made an easier roasted sweet potato recipe than this:
- Preheat the oven to 450 F and line a baking sheet with parchment paper.
- Add your diced sweet potatoes to a large bowl. Drizzle the olive oil over top, then add the nutritional yeast, garlic powder, dried rosemary, salt and pepper. Mix well to combine.
- Lay the sweet potatoes evenly on the baking sheet. Roast for 20 minutes, or until they’re slightly golden brown on the outside and can easily be pierced with a fork, flipping half way through. Serve and enjoy!

25-Minute Rosemary Garlic Roasted Sweet Potatoes

- 1 Sheet pan
Ingredients
- 2 medium sweet potatoes
- 1½ tbsp olive oil
- 2 tbsp nutritional yeast
- 1½ tsp garlic powder
- 1 tsp dried rosemary
- 1/2 tsp salt
- 1/4 tsp pepper
