Using fresh broccoli as the base of this easy broccoli salad recipe means it’s crunchy and hearty enough to hold up if you want to meal prep this salad ahead of time, which I highly recommend doing as a Registered Dietitian!

Quick & Healthy Broccoli Chickpea Salad with Apples

This easy side salad is made with raw broccoli, apple, and canned chickpeas, super speed tossed with my Quick 5-Minute Lemon Garlic Vinaigrette, pecans and raisins, for a super healthy, easy broccoli salad recipe that's delicious as a main meal or side!

Ingredients
 

  • 1 batch 5-Minute Fresh Lemon Garlic Vinaigrette
  • 340 g broccoli florets, chopped
  • 540 ml canned chickpeas, drained and rinsed, or 2 cups of cooked chickpeas
  • 1/4 large red onion, diced
  • 1/3 cup pecans, chopped
  • 1/3 cup raisins
  • 1 apple, diced
  • 1/3 cup parsley, chopped
  • 1/2 tsp salt, or to taste
  • 1/2 tsp pepper, or to taste

  • Start my making a batch of my 5-Minute Fresh Lemon Garlic Vinaigrette and set aside.
  • Next, combine the chopped broccoli, drained and rinsed chickpeas, red onion, pecans, raisins, apple and parsley to a large bowl. Pour the dressing over top, alongside the additional salt and pepper. Mix well to combine and enjoy!
