These Salted Caramel Dairy-Free Overnight Oats combine a base of hearty, healthy oats with soy milk for a protein boost, plus chia seeds for extra healthy fats… All things that make me super happy as a Registered Dietitian.

But then comes the good part.

Yup, we stir in my ooey, gooey homemade 5-Minute Date Paste Caramel for that classic, caramel-y perfection, but that’s more nutrient-dense! Plus, a sprinkle of crunchy, flakey salt to round out the flavor. I’m seriously drooling just thinking about it.

Trust me when I say I’ve tested every type of oats out there when I’m making overnight oats, and large flake oats always work the best.

When I tested this recipe using quick or instant oats, they turned out way too mushy.

Salted Caramel Dairy-Free Overnight Oats

These sticky, sweet Salted Caramel Dairy-Free Overnight Oats come together in less than 5 minutes using large flake oats and my super healthy 5-Minute Date Paste Caramel as a sweetener! They're the perfect quick, healthy breakfast that's packed with protein and fiber to keep you fueled all day!

Ingredients
 

  • 1 cup large flake oats
  • 2 tbsp chia seeds
  • 1/8 tsp salt , or to taste
  • 1 cup unsweetened soy milk
  • 3 tablespoons 5-Minute Date Paste Caramel, or to taste
  • 1/2 tsp vanilla extract

Optional Additions

  • An extra drizzle of the date caramel, chopped peanuts, or coconut flakes!

Instructions
 

  • Add the large flake oats, chia seeds and salt to the jar and mix well to combine.
  • Add the soy milk, date paste caramel, and vanilla extract to the jar. Stir well to combine, then add the lid and place in the fridge for at least 2-4 hours, but ideally overnight.
  • Once you're ready to eat, give the overnight oats a stir, then feel free to add an extra drizzle of the date caramel, chopped penauts or coconut flakes and enjoy!

Notes

The overnight oats will be the best consistency if you let them sit overnight, or at least 8 hours, in the fridge, but as long as you give them a minimum of 2-4 hours to set they’ll be good to eat!
