It’s rich, sweet, and luxuriously smooth, plus it kinda tastes like a vegan, healthier caramel, which means it’s an AMAZING sweetener in my Healthy Brownie Batter Overnight Oats!
Plus, you only need one ingredient to make this date paste recipe. Wondering what the ingredient is? It’s dates! Duh. Plus water, but we hardly count that as an ingredient.

What Makes Date Caramel Healthy?
So glad you asked! As a Registered Dietitian, I’m all about making things that taste amazing, but of course, I love it when they have an added nutrition bonus, too! This date paste is:
- High in fiber, with over 3 grams of fiber per serving!
- Packed with potassium!
- Lower on the glycemic index than regular sugar, so it doesn’t cause as big of a spike in blood sugar as regular sugar!

I tested this date paste using both a blender and a food processor. While the blender created the smoothest consistency, I still recommend the food processor because it was much less fussy because I didn’t have to keep stopping to scrape down the sides.
Of course, both methods work well, so use whichever you prefer!

5-Minute Date Paste Caramel
Ingredients
- 1½ cups pitted dates, See notes
- 1 cup water
Equipment
- 1 High speed blender or food processor
Instructions
- Add all ingredients to the food processor or high speed blender and blend until super smooth, which usually takes 3-4 minutes, scraping down the sides as needed.



How long will this keep?
Hi Linda, this should last about 2 weeks in an airtight container in the fridge, or can be frozen for up to a month!
