Easy vegan sundried tomato hummus recipe

Hummus for me is the ultimate snack. Full of fiber and protein, easy to whip up, and can be paired with pretty much anything. Cut up veggies? Check. Crackers? Check. On a sandwich? Check. In a bowl? Check. You get the message.

A lot of people are intimidated about making their own hummus, but to be honest, it couldn’t be easier. I rely on canned chickpeas to cut the prep time down even more on this recipe, but you could totally cook your own as well.

Easy Sundried Tomato Hummus

This quick and easy vegan sundried tomato hummus is the perfect thing to whip up for snacks, or to pair with bowls, sandwiches or wraps.

Ingredients
 

  • 1 can drained and rinsed chickpeas
  • 3 tbsp tahini
  • 1 clove fresh garlic
  • 1/4 cup lemon juice
  • 1/4 cup sundried tomatoes
  • 2 tbsp oil from sundried tomatoes, can replace with olive oil
  • salt and pepper to taste
  • 1/4 cup water, plus more to blend if needed

Equipment

  • High speed blender or food processor

Instructions
 

  • Drain and rinse can of chickpeas
  • Add all ingredients to blender or food processor, and blend until smooth
  • Serve with cut up veggies, crackers, or on sandwiches or bowls!
