And look, I’m no stranger to absolutely delicious salad recipes, but there’s something about the sweetness from the strawberries and homemade poppyseed dressing, the pepperiness of the arugula, the crunch of the almonds and the creaminess of the 5-Minute Almond Ricotta that has me absolutely hooked

It only takes 15 minutes to throw together meaning it’s perfect for those days when you want some veggies (which you know I love as a Registered Dietitian!), but don’t want to spend forever in the kitchen. Or if you want to be the most popular person at the potluck… It’s great for that too!

Wait, So No Dairy?!
Yup, you heard me right! This Strawberry Arugula Salad is totally dairy-free, thanks to my egg- and dairy-free Poppyseed Dressing AND my creamy 5-Minute Vegan Almond Ricotta as the cheese swap.
While I highly recommend adding the almond ricotta (because it seriously elevates this salad with a salty, tangy creaminess), I’ve tested it without, and it’s still absolutely delicious.

15-Minute Arugula Strawberry Salad with Poppyseed Dressing (Dairy-Free!)
Ingredients
- 4 handfuls arugula
- 1 cup fresh strawberries, sliced
- 1/2 batch of The Best Poppy Seed Dressing (Easy & Dairy-Free!)
- 1/4 batch 5-Minute Homemade Vegan Ricotta with Almonds
- 1/4 cup almonds, chopped
- 1/4 red onion, slices
- 1 tbsp nutritional yeast
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Make a half batch of The Best Poppy Seed Dressing, set aside.
- Make a half batch of the 5-Minute Homemade Vegan Ricotta with Almonds and set aside.
- In a large bowl, combine the arugula, sliced strawberries, chopped almonds, red onion, nutritional yeast, salt and pepper. Using a large spoon, scoop dollops of the vegan ricotta into the salad as well.
- Drizzle the Poppy Seed Dressing over the top of the salad, you may not need to use all of it. Toss well and serve!
