15-Minute Arugula Strawberry Salad with Poppyseed Dressing (Dairy-Free!)
This is the best quick and easy Arugula Strawberry Salad that's dairy-free and uses my homemade Poppyseed Dressing! It comes together in less than 15 minutes and is perfect for lunch, dinner or to bring to your next potluck!

In a large bowl, combine the arugula, sliced strawberries, chopped almonds, red onion, nutritional yeast, salt and pepper. Using a large spoon, scoop dollops of the vegan ricotta into the salad as well.
Drizzle the Poppy Seed Dressing over the top of the salad, you may not need to use all of it. Toss well and serve!
