15-Minute Arugula Strawberry Salad with Poppyseed Dressing (Dairy-Free!)

This is the best quick and easy Arugula Strawberry Salad that's dairy-free and uses my homemade Poppyseed Dressing! It comes together in less than 15 minutes and is perfect for lunch, dinner or to bring to your next potluck!

  • Make a half batch of The Best Poppy Seed Dressing, set aside.
  • Make a half batch of the 5-Minute Homemade Vegan Ricotta with Almonds and set aside.
  • In a large bowl, combine the arugula, sliced strawberries, chopped almonds, red onion, nutritional yeast, salt and pepper. Using a large spoon, scoop dollops of the vegan ricotta into the salad as well.
  • Drizzle the Poppy Seed Dressing over the top of the salad, you may not need to use all of it. Toss well and serve!
