Friends, date paste is one of those ingredients you don’t think you need until you try it, and then I can almost guarantee you’ll be hooked.

It’s rich, sweet, and luciously smooth, plus it kinda tastes like a vegan, healthier caramel, which means it’s an AMAZING sweetener in my Healthy Brownie Batter Overnight Oats!

Plus, you only need one ingredient to make this date paste recipe. Wondering what the ingredient is? It’s dates! Duh. Plus water, but we hardly count that as an ingredient.

What Makes Date Caramel Healthy?

So glad you asked! As a Registered Dietitian, I’m all about making things that taste amazing, but of course, I love it when they have an added nutrition bonus, too! This date paste is:

  • High in fiber, with over 3 grams of fiber per serving!
  • Packed with potassium!
  • Lower on the glycemic index than regular sugar, so it doesn’t cause as big of a spike in blood sugar as regular sugar!

Can I Use a Blender Instead of a Food Processor?

Totally! In fact, I’ve tested out making this date paste using both a blender and a food processor, and the blender actually results in a smoother date paste.

With that being said, I recommend using the food processor in this recipe because I found it time-consuming to have to stop the blender every few minutes to scrape down the side, but use whichever you’d prefer!

Optional Add-Ins

I’ve tested this date paste to make sure it’s SUPER delicious on its own, but here are some fun add-ins if you wanna make it fancy!

  • A pinch of flaky salt for a salted ‘caramel’ flavor!

5-Minute Date Paste Caramel

This quick and easy Date Paste Caramel comes together in less than 5 minutes and is the perfect healthy, fiber-packed sweetener that's delicious in desserts, oatmeal and baked goods!

Ingredients
 

  • cups pitted dates, See notes
  • 1 cup water

Equipment

  • 1 High speed blender or food processor

Instructions
 

  • Add all ingredients to the food processor or high speed blender and blend until super smooth, which usually takes 3-4 minutes, scraping down the sides as needed.

Notes

I’ve tested this recipe using both Medjool dates and Deglet Noor dates.
I won’t lie, the Medjool dates definitely make for a slightly smoother date paste, but the Deglet Noor dates will also work. If you’re using them, I recommend soaking them in water for about 4 hours before making the date paste to soften them.
