Friends, if you know me, you know I’m alllll about sharing healthy vegan snack recipes, and this Healthy and Spicy Edamame Dip with Kale is no different!

And as a Registered Dietitian, it’s even better to me when those snack recipes are packed with protein, fiber and healthy fats (just like my absolutely delicious, couldn’t-be-easier Air Fryer Chickpea Snack!) and this edamame dip totally is.

This spicy edamame dip recipe has a slightly nutty, spicy flavor that’s super fresh. It’s seriously SO delicious paired with veggies, crackers, or my personal favorite way to eat it, with tortilla chips!

Never Cooked With Edamame Before?!

Don’t worry, it seriously couldn’t be easier! I’ve made and shared a ton of easy edamame recipes because it’s such a great protein source that’s easy to keep on hand, since it’s a frozen!

I recommend buying shelled edamame from the freezer section of your grocery store. I’ve tried using edamame in the pods to make this recipe since it’s what I had on hand, and let’s just say, it took WAY longer to make the recipe!

To cook the edamame before making the dip, I simply boil the kettle, place the frozen edamame in a large bowl, and pour the boiling water over top- enough to cover! Then I let the edamame sit in the water for about three minutes, until cooked through. You can pull one edamame bean out to taste test!

Healthy and Spicy Edamame Dip with Kale

This spicy edamame dip comes together in just 5 minutes! Perfect as a quick, easy, and healthy snack, this easy dip recipe is packed with protein and flavor. Made with kale, this dip blends up until it’s smooth, and is delicious served with chips, veggies, crackers, and more!

Ingredients
 

  • 2 cups shelled edamame
  • 1/4 cup plus 2 tbsp olive oil
  • 1 cup kale, finely chopped
  • 1.5 jalapeños, sliced
  • 1.5 lemons, juiced
  • 3 cloves garlic
  • water as needed
  • 3/4 tsp salt
  • 1/4 tsp pepper

Equipment

  • High speed blender or food processor

Instructions
 

  • If your edamame is frozen, steam in the microwave or by adding to a bowl and pouring boiling water over top and letting it sit for about 3 minutes until the edamame is cooked through.
  • Add all ingredients to a high speed blender or food processor and blend until smooth, which usually takes about 3 minutes. Serve with chips, sliced veggies or crackers and enjoy!

Notes

Feel free to taste teste the dip once it’s blended and add more jalapeno for spiciness, more lemon for tartness, or more salt and pepper as desired!
Store leftovers in an airtight container for up to 5 days.
