There’s not much I like more than a good peanut lime sauce. But a peanut lime sauce paired with noodles? Even better.

This peanut lime noodle bowl recipe is everything I want in a weeknight recipe staple- It’s fast (like, less than 20 minutes fast!), insanely easy, delicious, and nourishing. Also, this noodle bowl recipe ticks off all the boxes that I look for in a really delicious and healthy meal- It’s packed with vegetables (I used broccoli, cabbage, red pepper and bok choy, but feel free to use whatever you have on hand!), protein from the edamame, energizing carbohydrates from the buckwheat noodles, fat from the peanut lime sauce, fiber from all the plant-based goodness, and sweet, tangy, creamy flavor!
This noodle bowl recipe is what I consider to be a true fridge-clear-out meal. Since I usually have some veggies lurking around the back of my fridge by the end of the week, frozen edamame on hand, buckwheat noodles in the cupboard and peanut butter in the fridge, this bowl is a pretty easy meal to throw together on those days you just don’t want to run to the grocery store.

Peanut Lime Noodle Bowl Recipe
Ingredients
- 150 g buckwheat noodles
- 1 cup shelled edamame, I use frozen
- 1 red bell pepper, sliced
- 2 large bok choy, chopped
- 2 cups broccoli florets
Peanut Lime Sauce
- 1/4 cup natural peanut butter
- 1 tbsp minced ginger
- 2 tsp maple syrup
- 2 tsp soy sauce
- 2 tsp sriracha
- 1 tsp sesame oil
- 6 tbsp oat milk
- 1 lime, juiced
Instructions
- Boil water in a medium pot. Once boiling, cook buckwheat noodles as per package instructions.
- Cook edamame as per package instructions.
- In a small bowl, whisk together all ingredients for peanut lime sauce until smooth and combined.
- Add buckwheat noodles, edamame, peanut lime sauce, and sliced vegetables to a bowl and combine. Serve and enjoy!
