Friends, is there anything better than waking up and already having an easy, delicious breakfast prepped in the fridge?
Personally, I don’t really think so.
That’s why I’m SUCH a huge fan of overnight oats. I’ve developed and tested a ton of overnight oats recipes over the years, and this blueberry version is one of my absolute favorites.
They take all of five minutes to throw together, and after a little fridge magic and a few hours, voilà! You have a healthy, fiber-packed breakfast that’ll keep you full for hours, which you know I love as a Registered Dietitian!
Plus, this one I whipped up is bursting with juicy blueberries, a pop of lemony zing, and the creamiest dairy-free base, aka everything you want in a no-fuss breakfast.

The Secret to That Perfect Creamy Bite? It’s the Oats
As I was developing this recipe, I tested it with both large flake oats and quick oats, and I can confidently say that the large flake oats work WAY better.
The quick-cooking oats turn out kinda mushy and just not super delicious or creamy, so I don’t recommend using them.
A Spoonful of Sweetness
Maple syrup is always a classic and it’s what we use in this recipe, but if you’re feeling fancy—or just want a fiber-boosted, whole-food option, my 5-Minute Date Paste Caramel is SO good in this.
It adds a rich, caramel-y flavor that pairs perfectly with the lemon and blueberries. I’ve tested the recipe using both options and they’re both delicious!

I dreamed this recipe up with busy mornings in mind, and the proof is in the pudding… Or overnight oats!
Creamy Lemon Blueberry Overnight Oats (Dairy-Free!)
Equipment
- 1 mason jar or container with a lid
Ingredients
- 1 cup large flake oats
- 2 tbsp chia seeds
- zest of 1/2 lemon
- 1/2 cup blueberries I used frozen
- 1 cup unsweetened soy milk
- 2 tbsp maple syrup
- 1 lemon juiced
- 1/2 tsp vanilla extract
- pinch of salt
Instructions
- Add the oats, chia seeds and lemon zest to the mason jar and stir well to combine.
- Add the remaining ingredients, stir well to combine, then add the lid and place in the fridge to let sit for a minimum of 2 hours, but I recommend at least 4 hours or overnight.
- Once you're ready to eat, give them a stir and enjoy!
