Creamy Lemon Blueberry Overnight Oats (Dairy-Free!)

  • 1 mason jar or container with a lid

Ingredients

  • 1 cup large flake oats
  • 2 tbsp chia seeds
  • zest of 1/2 lemon
  • 1/2 cup blueberries I used frozen
  • 1 cup unsweetened soy milk
  • 2 tbsp maple syrup
  • 1 lemon juiced
  • 1/2 tsp vanilla extract
  • pinch of salt

Instructions

  • Add the oats, chia seeds and lemon zest to the mason jar and stir well to combine.
  • Add the remaining ingredients, stir well to combine, then add the lid and place in the fridge to let sit for a minimum of 2 hours, but I recommend at least 4 hours or overnight.
  • Once you're ready to eat, give them a stir and enjoy!

Notes

I recommend letting these overnight oats sit in the fridge for a minimum of two hours, but four hours is best. I typically leave them in the fridge overnight to enjoy the next morning!
These will stay fresh for 2-3 days in the fridge!
