Friends, as a Registered Dietitian, if I were to think of my perfect quick and easy main meal that’s also delicious AND healthy, this would be it.

We take tender, shredded tofu and coat it in smoky-sweet BBQ sauce, paired with fresh, crunchy veggies and a hearty grain base. Oh, and did I mention we drizzle my Creamy, Healthy 5-Minute Vegan Ranch Dressing on top, too?! Yeah, it seriously doesn’t get better than that!

Wait… What’s Shredded Tofu?!

I’ve shared a ton of easy and healthy tofu recipes over the 10 years that I’ve been a Dietitian, but if you’ve never had Vegan BBQ Shredded Tofu, don’t worry!

It’s basically just extra firm tofu that we shred with a cheese grater so we’re left with tiny little strips that soak up alllll of the delicious flavor of our seasonings!

Use Whatever Grain You’re Feeling!

I’ve tested these meal prep tofu bowls with precooked brown rice, couscous, quinoa AND sweet potato, and all options are absolutely delicious!

That said, when I want this meal to come together EXTRA quick, I use microwavable rice! It’s such a hack that means this whole bowl comes together in like, 15 minutes flat.

Time to Make Some Tofu Rice Bowls!

Step 1: Combine shredded tofu ingredients in a large bowl

Easy 30-Minute Healthy Shredded BBQ Tofu Bowls (High Protein!)

These Easy, Healthy Shredded BBQ Tofu Bowls come together in 30-minutes and are the perfect flavor-packed meal prep tofu bowls to have as a quick lunch or dinner!   • Make a batch of BBQ Shredded Tofu.
  • While that's cooking, whip up a batch of your Healthy Creamy Ranch Dressing.
  • When those are both done, start assembling your bowls. Add about half a cup of cooked rice or other grains to the bowl, followed by equal amounts of the shredded tofu. Fill the rest of the bowl with sliced cucumber and drizzle your creamy sauce on top. Enjoy!
