10-Minute Curry Tofu Salad (High Protein!)

This Curry Tofu Salad is fast, fresh, and full of flavor! Think creamy extra firm tofu, crunchy veggies, and a cozy kick of curry spice all tossed together in under 15 minutes. No stove, no stress, just a high-protein, meal-prep-friendly dish that tastes even better the next day.

Ingredients
 

  • 1 block, 350g extra firm tofu, crumbled
  • 3 stalks of celery, diced
  • 1/2 small red onion, diced
  • 1/4 cup cilantro leaves, chopped
  • 3 tbsp vegan mayonnaise
  • 1/2 lemon, juiced
  • 1 tbsp dijon mustard
  • 1 tbsp curry powder
  • 1 tsp garlic powder
  • 3/4 tsp salt, or to taste
  • 1/2 tsp black pepper, or to taste

Equipment

Instructions
 

  • Start by chopping your celery, red onion and cilantro and set aside.
  • Remove your tofu from the packaging, drain the excess water, and wrap the tofu in paper towel and lightly press to remove excess water.
  • Crumble the tofu with your hands in a large bowl.
  • Add the chopped celery, red onion and cilantro, vegan mayo, dijon mustard, lemon juice, curry powder, garlic powder, salt and pepper and stir well to combine. Taste the curry tofu salad and adjust the seasonings to suit your preferences.
  • Serve on toast, in lettuce boats, in a salad, or with crackers and enjoy!
