The Easiest 20-Minute Healthy Barbecue Chickpea Salad
Equipment
- 1 medium pot
Ingredients
- 1 batch BBQ Chickpeas
- 1 batch Creamy Vegan Ranch Dressing
- 1 head of romaine lettuce chopped
- 1 carrot grated
- 1/4 red onion diced
- 1 green onion sliced
- 1/4 cup parsley chopped, cilantro works too!
- 1/2 large cucumber diced
Instructions
- Start by preparing the 10-Minute BBQ Chickpeas.
- While those are cooking, make your Vegan Ranch Dressing.
- Chop your vegetables. Once all components are made, add the veggies to a large bowl, top with the barbecue chickpeas, and drizzle the salad dressing on top to your hearts content. Combine and enjoy!
