Flavorful 10-Minute Spiced Black Beans served with hearty rice, crunchy veggies, fresh salsa and drizzled with a Smoky, Creamy Chipotle Sauce to tie it all together! This bean and rice bowl is so easy to make but seriously so delicious and bursting with flavor, and only takes 20 minutes to make!

Friends, have you ever taken a bite out of a super simple meal and wondered HOW it could possibly taste so good, when it only took a few minutes to make?!
Because that was me eating this Black Bean & Rice Bowl with Chipotle Sauce. Not only is it insanely delicious, it’s one of my many easy meals that only takes 20 minutes to make from start to finish!
We use my 10-Minute Spiced Black Beans that pack a seriously flavorful punch (and are SO easy to make!), my smoky, Creamy Chipotle Sauce, rice (use microwavable rice to make it come together quickly!) and loads of crunchy veggies and other toppings to fit your fancy!
Why We Should Eat More Beans
Okay, I know what people say about beans… but hear me out! As a Registered Dietitian, I seriously can’t get enough of the health benefits of beans, so let me break them down for you!
Beans are packed with fiber: And yes, this is one of the main reasons they, ahem… well, you know the rest. But fiber is what makes beans so satiating, helps with blood sugar control, and yes, bowel movements.
They’re a great source of iron: Which can sometimes be trickier to get enough of on a plant-based diet! But most beans contain at least some iron, with black beans and lentils having the most!
Bonus points because this bean and rice bowl also has bell peppers in it, which contain a ton of vitamin C, increasing the absorption of that iron!
They’re a good source of protein: Which you know I LOVE for making a meal more satisfying!
Side note: If you want to avoid the gassiness that beans sometimes cause, make sure you increase the amount you eat slowly! If you’re used to having 1/4 cup per day, increase that by 2 tbsp for a few days, then a few more tbsp until you’re at your desired serving size!
Let’s Get Cookin’ This Black Bean Rice Bowl!
You’ll notice when you’re making this black bean rice bowl that we use simple components that all come together pretty quicky! Hot tip: If you want this rice bowl to come together even more quickly, use minute rice!
- Start by making your rice by following the package instructions.
- Next, make a batch of my 10-Minute Spiced Black Beans, but add 1 cup of corn kernels to the mixture while cooking! This can be frozen corn straight from the freezer, fresh corn, or canned corn that’s been drained and rinsed.
- While those are cooking, whip up some Creamy Chipotle Sauce.
- Now, time to assemble the bowls! Really, you can add however much to the bowl of each ingredient that you want, but here’s what I did: combine about 1/2 cup of rice with 1/2 cup of beans, a handful of lettuce, about 1/4 cup each of bell pepper, diced avocado and salsa and a couple of tbsp of diced red onion. Drizzle about 2-3 tbsp of sauce over top and enjoy!

Ingredients
