Let’s Get Cookin’ This Black Bean Rice Bowl!
The first time I made black beans and rice recipe, I didn’t sauté the corn, but after testing it both ways, lightly charring the corn in the pan with the black beans made a huge difference in the flavor, so don’t skip it!
And while this might seem like a lot of components coming together, I’ve tested this recipe to perfection to make sure that we maximize the time that we do spend cooking so it comes together easily!
If you need to cook rice, do that while you’re also cooking the black beans and corn, then make the 5-Minute Easy Tahini Chipotle Sauce while those two components are cooking!





Actually Tasty 25-Minute Healthy Black Bean Rice Bowls with Creamy Chipotle Sauce
Ingredients
- 1 batch 10-Minute Spiced Black Beans
- 1 cup corn kernals, I used frozen
- 1 batch Creamy Chipotle Sauce`
- 2 cups cooked rice, I used brown rice
- 2 cups shredded lettuce
- 2 cups salsa, or to taste
- 1 bell pepper, diced
- 1/4 red onion, diced
- 1 avocado, diced

- 1 lime juiced
- 1/4 cup fresh cilantro
- 2 cups tortilla chips

Instructions
- Start by making your rice by following the package instructions.
- Next, make a batch of my 10-Minute Spiced Black Beans, but add 1 cup of corn kernals to the mixture while cooking! This can be frozen corn straight from the freezer, fresh corn, or canned corn that's been drained and rinsed.
- While those are cooking, whip up some Creamy Chipotle Sauce.
- Now, time to assemble the bowls! Really, you can add however much to the bowl of each ingredient that you want, but I combined about 1/2 cup of rice with 1/2 cup of beans, a handful of lettuce, about 1/4 cup each of bell pepper, diced avocado and salsa and a couple of tbsp of diced red onion. Drizzle about 2-3 tbsp of sauce over top, plus some fresh lime juice, cilantro, and a handful of tortilla chips and enjoy!



This was totally delicious. Loved the spicy beans. I didn’t have tahini for the sauce, so I substitute less healthy mayo and sour cream, but the flavor was wonderful. We are eating far less meat these days, so I’ll make this again.
