This no-cook, 15-Minute Tasty & Healthy Broccoli Chickpea Salad with Lemon Vinaigrette uses my 5-Minute Fresh Lemon Garlic Vinaigrette and chopped, crunchy broccoli with canned chickpeas to create a super healthy, easy salad that’s delicious as a main meal or side!

Step aside traditional green salad, there’s a new sheriff in town, and it’s this lemony, garlicky, slightly sweet and Actually Tasty Broccoli Chickpea Salad that only takes 15 minutes to make!
You probably never thought you’d be CRAVING a broccoli salad, until this one!
I swear, I started eating this salad after testing it and seriously couldn’t stop. I also was a little hesitant to share it with my husband since he’s not always the biggest fan of, ahem, super healthy dishes, but he actually LOVED it and couldn’t stop raving about it!
It probably has something to do with the perfectly balanced zesty, garlicky dressing paired with the crunchy broccoli and pecans, and sweetness from the apple and raisins!
Using broccoli as the base of the salad means it’s hearty enough as a green to hold up if you want to meal prep this salad ahead of time, which I highly recommend doing! It would work perfectly along my other meal prep staples, like my Actually Tasty 15-Minute Healthy Shredded Tofu, Chili Lime Roasted Chickpeas and Creamy Maple Dijon Salad Dressing.

Speaking of healthy, as a Registered Dietitian I love that this salad totally holds up as a super easy main dish on its own since it has protein and fiber from the chickpeas and healthy fats in the dressing! Main Ingredients You’ll Need!
A batch of my 5-Minute Fresh Lemon Garlic Vinaigrette: This recipe couldn’t be easier and adds the delicious lemony, garlic freshness to the salad!
Chopped Broccoli: Real talk, I used already chopped broccoli florets to make this recipe even easier, but you do you! The broccoli adds a healthy dose of cruciferous veggies, while being a hearty base for the salad!
Canned Chickpeas: For protein and fiber! Sure, you could totally use cooked-from-scratch, but I almost never bother because canned are so convenient and just as healthy.
Crunchy Apple: for extra sweetness and fiber!
Pecans: For healthy fats and extra texture and crunch!
Red Onion: For a little bite!
Raisins: For even more sweetness!
Parsley: For extra freshness!

Time to Assemble!
Seriously, this salad couldn’t be easier to make! It requires just a few simple steps and you’re on your way to flavor town!
- Start my making a batch of my 5-Minute Fresh Lemon Garlic Vinaigrette and set aside.
- Next, combine the chopped broccoli, drained and rinsed chickpeas, red onion, pecans, raisins, apple and parsley to a large bowl. Pour the dressing over top, alongside the additional salt and pepper. Mix well to combine and enjoy!

- 340 g broccoli florets chopped
- 540 ml canned chickpeas drained and rinsed, or 2 cups of cooked chickpeas
- 1/4 large red onion diced
- 1/3 cup pecans chopped
- 1/3 cup raisins
- 1 apple diced
- 1/3 cup parsley chopped
- 1/2 tsp salt or to taste
- 1/2 tsp pepper or to taste

This was a refreshing change from the usual mayo broccoli salad. The only change I made was to use a champagne vinaigrette (because I had made a few days ago and needed to use up). No other changes and will definitely be making again and trying with the lemon dressing. Served on the side with a chili mac casserole and some cornbread.
