What makes this the best vinaigrette? I mean, let’s start with the obvious: it tastes incredible.
The herby thyme pairs perfectly with the acidic apple cider vinegar, and a touch of vegan mayo adds some creaminess that’s oh-so-good!
But aside from that, it also takes, like, 5 minutes to make, which means you have no excuse not to make it weekly so you can have it drizzled over my 5-Minute Fresh Green Salad!

The Best Herby Salad Dressing with Apple Cider Vinegar
Equipment
Ingredients
- 1/2 cup olive oil
- 1/4 cup apple cider vinegar
- 1 tbsp olive juice straight from the jar!
- 1 tbsp maple syrup or other sweetener
- 1 tbsp vegan mayonnaise or regular!
- 1 tsp dijon
- ½ tsp soy sauce
- 1 clove garlic finely minced
- 1/2 tsp dried thyme
- 1/4 tsp salt to taste
- 1/4 tsp ground black pepper or to taste
Instructions
- Add all ingredients to a jar or bowl and whisk until well combined.
