This California Strawberry, Walnut & Arugula flatbread makes the most delicious quick and easy meal, appetizer or snack!
There’s something about a simple flatbread recipe that just hits the spot for me, anyone else?
While Canadians are just starting to enjoy spring, let’s get excited about summer early this year with this sweet, fresh and delicious California Strawberry recipe! This California Strawberry, Walnut & Arugula flatbread would make the perfect appetizer, quick and easy dinner or contribution to a potluck.
You may never have thought of adding strawberries to a savoury flatbread recipe, but I highly recommend it. The strawberry flavour gets intensified from roasting, which makes the California strawberries even more delicious. The sweetness of the strawberries pairs perfectly with the garlicky olive oil base, crunchiness of the walnuts, and light peppery flavour of the arugula. We finish it all off with a balsamic glaze, which takes it to the next level. If you’re skeptical, this is your sign to try it out- I promise you won’t regret it.
California strawberries are an excellent source of vitamin C, with a serving of 8 strawberries having the same amount as an orange! I often recommend my clients and Thriving on Plant-Based Fundamentals students to pair strawberries with iron-rich meals, since vitamin C helps to increase the absorption of iron. I love adding a serving of 8 California strawberries to my meals or snacks, since they’re a source of fibre, which is so important for helping us to stay feeling satisfied and fuller for longer.
How to make this flatbread recipe:
- Preheat your oven to 450 degrees F.
- In a small bowl, whisk together minced garlic and olive oil. Brush onto flatbread crust
- Add sliced California strawberries, chopped walnuts, sliced red onion and salt to flatbread. Cook for 10-12 minutes, or until crust is golden brown.
- Remove from oven and top with arugula and a drizzle of balsamic glaze. Serve and enjoy!
Recipe Notes
- If you don’t have balsamic glaze on hand, you can easily make it by simmering 1/2 cup of balsamic vinegar with 1 tbsp of sugar in a medium pot on the stove until reduced and the balsamic glaze sticks to the back of a spoon.
- You may need to cook the flatbread for more or less time, depending on the package directions and your oven.
