Craving something sweet, chewy, satisfying and nourishing? I’ve got you covered with these oatmeal cookie energy balls.
These energy balls can be made in advance and kept in the fridge or freezer for days when you’re running out of the house, or they can be enjoyed for breakfast or as a sweet treat. Basically, any time you want a little something to munch on these energy balls come in handy.
If you’re not much of a chocolate and peanut butter fan- first of all, I don’t think we can be friends- but second of all, the peanut butter can be swapped out for sunflower seed butter, almond butter, cashew butter, etc. and the chocolate chips can be replaced with basically any nut or seed you want.

Oatmeal Cookie Energy Balls
Ingredients
- 1 cup large flake oats
- 1/4 cup chia seeds
- 2 tbsp maple syrup
- 2 tbsp peanut butter
- 1/4 cup melted coconut oil
- 1/4 cup chocolate chips
- 1 tsp vanilla extract
- 1/8 tsp salt
Instructions
- Place large flake oats in a blender or food processor. Blend for ~5 seconds, until oats are chopped.
- Place oats in a large bowl.
- Add remaining ingredients to the bowl.
- Mix all ingredients together until combined.
- Once combined, roll mixture into balls (about 2 tbsp in each) and place on a plate.
- Refrigerate balls for at least 15 minutes before consuming.
