Call me crazy (or just soooo clearly a Registered Dietitian), but there’s almost nothing I love more than a fresh, healthy salad. And to make a good salad, you most definitely need a good dressing, and luckily, this one is incredible!

It’s bright, herby, and perfectly coats any salad you want to pair it with, but I especially made it for my 15-Minute Fresh & Healthy Chickpea Greek Salad!

While I’m definitely not hating on store bought salad dressings, there’s totally a time and place for them, this homemade greek salad dressing takes less than five minutes to make, so if you have the extra time, I think it’s worth it.

Better yet, make a double batch and store the leftovers in the fridge!

I’ve also tested this mediterranean lemon dressing on my super easy 25-Minute Easy Herby Roasted Cauliflower and Chickpeas sheet pan meal and seriously couldn’t get enough of the combo!

Let’s Round Up The Ingredients!

This salad dressing only needs a handful of ingredients that you probably already have on hand!

  • We use olive oil at the base, and because it’s kind of the star of the show, I recommend using one that you LOVE the taste of!
  • I’ve also tested this lemon vinaigrette with both bottled lemon juice and fresh lemon juice, and I can confidently say that the fresh lemon juice tastes soooo much better, but you do you!
  • Also, while I developed this recipe to use fresh garlic, I’ve also tested it with granulated, and fresh wins by a landslide. With that being said, if you do need to use granulated, I recommend about 1/2 teaspoon!

5-Minute Healthy Lemon Greek Salad Dressing

This salad dressing uses olive oil, fresh garlic & lemon and herby oregano all mixed together to make the most delicious, mouthwatering Healthy, Homemade Fresh Greek Salad Dressing that comes together in just 5-minutes! This healthy homemade salad dressing can be prepped ahead of time and stored in your fridge to add delicious flavor to my 15-Minute Fresh & Healthy Chickpea Greek Salad, or pretty much any other salad you like!

Ingredients
 

  • 1/4 cup olive oil
  • 1 lemon, juiced
  • 1 clove garlic, minced
  • 1 tsp oregano
  • 1/4 tsp salt, or to taste
  • 1/4 tsp ground pepper, or to taste

Equipment

  • 1 small bowl or mason jar

Instructions
 

  • Add all ingredients to a mason jar or bowl and whisk well to combine. If you're using a mason jar, you can add the lid and shake. Drizzle over my 15-Minute Fresh & Healthy Greek Chickpea Salad, roasted veggies, or as a dip for bread and enjoy!

Storing leftovers: Refrigerate leftovers in an airtight container for up to one week!
