This healthy homemade salad dressing can be prepped ahead of time and stored in your fridge to add delicious flavor to my 15-Minute Fresh & Healthy Chickpea Greek Salad, or pretty much any other salad you like!

Call me crazy (or just soooo clearly a Registered Dietitian), but there’s almost nothing I love more than a fresh, crunchy, flavorful Greek Salad. And to make a good salad, you most definitely need a good dressing, and luckily, this one is incredible!
It’s bright, herby, and perfectly coats any salad you want to pair it with, but I especially made it for my 15-Minute Fresh & Healthy Chickpea Greek Salad!
It also tastes delicious on roasted veggies, or even as a herby dip for bread!
While I’m definitely not hating on store bought salad dressings, since there’s totally a time and place for them, there’s something about a fresh, homemade salad dressing that just hits differently. AND they usually only take less than five minutes to make, so if you have the extra time, I think they’re worth it.
Better yet, make a double batch and store the leftovers in the fridge!

Honestly, this greek salad dressing is so delicious on anything, but I particularly love it on my Greek Chickpea Salad (of course!), my Greek-Inspired Vegan Pasta Salad, or drizzled on top of roasted veggies, like my Maple Glazed Carrots and Roasted Brussel Sprouts!
Let’s Round Up The Ingredients!
This salad dressing only needs a handful of ingredients that you probably already have on hand!
Olive oil: As the base! I used extra virgin olive oil, but any olive oil will work.
Fresh lemon juice: For tanginess! I do think it’s important to use fresh rather than bottled for the best flavor!
Fresh Garlic: I’ve made this with fresh garlic and granulated and I like the fresh better, but granulated can work in a pinch!
Dried Oregano: For that classic Greek dressing herby flavor.
Salt & pepper: Key to any good salad dressing!

This salad dressing recipe seriously couldn’t be easier!
- Add all ingredients to a mason jar or bowl and whisk well to combine. If you’re using a mason jar, you can add the lid and shake. Drizzle over my 15-Minute Fresh & Healthy Greek Chickpea Salad, roasted veggies, or as a dip for bread and enjoy!
