Friends, I hate to brag, but I was making this Soy and Sesame Shaved Carrot Side Salad longgggg before it went viral.

Yup, that’s right, I’ve been a fan (and testing it to perfection) for years. But as a Registered Dietitian, I’d be remiss not to say: while this easy carrot salad doesn’t have the magical healing powers TikTok might claim… it is still THAT delicious.

So what DOES this raw ribboned carrot salad have going on? Just a little something called bright, savory, nutty magic, with a punch of umami to keep things interesting!

And look, I’m no stranger to absolutely delicious and healthy salads, but I have a feeling this quick vegetable side dish might be your new favorite.

Ingredient flatlay of shaved carrot, soy sauce, sesame oil, sesame seeds and apple cider vinegar.
