Thin ribbons of sweet, crunchy carrots soak up a salty splash of soy sauce, a drizzle of toasty sesame oil, and a zingy hit of rice vinegar. Toss in some sesame seeds for crunch, and you’ve got a 5-minute flavor bomb that’s fresh, satisfying, and adding a big dose of veggies to your meal!

Shaved carrots: I used a good ol’ fashioned veggie peeler for this. No fancy tools needed!

5-Minute Soy and Sesame Shaved Carrot Salad
Ingredients
- 4 large carrots shaved, I used a vegetable peeler
- 1½ tbsp sesame oil
- 2 tbsp rice vinegar can be substituted with apple cider vinegar
- 2 tsp soy sauce
- 2 tsp sesame seeds
Instructions
- Add the shaved carrots to a large bowl, then add the sesame oil, rice vinegar, soy sauce and sesame seeds. Toss well to combine and enjoy!
