Ingredients

  • 4 large carrots shaved, I used a vegetable peeler
  • tbsp sesame oil
  • 2 tbsp rice vinegar can be substituted with apple cider vinegar
  • 2 tsp soy sauce
  • 2 tsp sesame seeds

Instructions

  • Add the shaved carrots to a large bowl, then add the sesame oil, rice vinegar, soy sauce and sesame seeds. Toss well to combine and enjoy!

Notes

You can save leftovers in the fridge in an airtight container for up to 2 days!
