15-Minute Stovetop Carrot Cake Oatmeal (Vegan)
Ingredients
- 1 cup rolled oats
- 2 cups plant-based milk
- 1 cup grated carrot, about 2 medium carrots
- 1 tbsp chia seeds
- 1 tbsp maple syrup
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1 tsp dried ginger
- 1/8 tsp nutmeg
- 1/4 tsp salt
Optional toppings
- walnuts
- extra grated carrot
- coconut flakes
- plant-based yogurt
Equipment
- Medium pan
Instructions
- Add all ingredients into a pot over medium heat. Let mixture come to a low boil, then reduce heat to low to simmer.
- Let simmer for 5-10 minutes until desired creaminess, stirring consistently.
- Serve oatmeal with toppings of your choosing and enjoy!
