You would think as someone who pretty much cooks and talks about food for a living, I would love to cook 100% of the time. But that isn’t really the case. Sure, I probably love cooking (and definitely love food!) more than the average cooking, but there are usually 2-3 nights per week that dinner rolls around and I have no idea what I’m going to throw together. Cue this easy vegan ‘baked’ beans recipe.

I love this meal because it relies solely on pantry staples, meaning I pretty much always have the ingredients on hand. It also comes together in 15-minutes or less, which is perfect for those nights that I really can’t be bothered to make anything fancy.

There’s also no chopping required whatsoever for this meal, which means very minimal cleanup. So basically, this is one of the laziest meals that I could think up- and I love it.

But don’t be fooled, these vegan ‘baked’ beans are seriously delicious. They pack a flavor punch from the tomato paste, spices, and liquid smoke. Plus, they’re a great source of protein from the cannellini beans. Although these aren’t traditional baked beans (because they aren’t baked at all), they’re much healthier with very little added sugar and come together much quicker.

Cannellini or white beans are pretty underrated from my experience. They take on the flavor of whatever they’re cooked with, offering a delicious creamy texture. They’re also packed with protein, iron, and magnesium. I use them a lot in my soup recipes from Everyday Vegan Soups, because they’re so versatile!

Easy Vegan ‘Baked’ Beans

These easy vegan baked beans come together in 15 minutes and reply on mostly canned foods, making them the perfect weeknight staple meal!

Ingredients
 

  • 1 can cannellini/white beans, drained and rinsed
  • 1/2 cup tomato paste
  • 2 tbsp apple cider vinegar
  • 1 1/2 tbsp maple syrup
  • 1 tsp smoked paprika
  • 1/4 tsp liquid smoke, optional
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
  • 1/2 lemon, juiced

Instructions
 

  • Add all ingredients to a pot, mix together, and cook for ~10 minutes until beans are heated through and slightly softened. Serve on toast and enjoy!
