These Healthy Tofu Fajitas come together in just 20 minutes on the stovetop using extra firm tofu, sliced peppers and onions, and my signature5-Minute Simple Taco Mix Seasoningfor the perfect high-protein weeknight meal!

Instructions
Let the olive oil heat in a large pan over medium heat. Once heated, add the tofu strips, and sprinkle 2 tsp of the Taco Seasoning Mix and the garlic powder on top of the tofu. Sauté to combine.
Let the tofu cook for about 10 minutes, flipping occasionally. Once it's lightly golden brown on most sides, push the tofu to the side of the pan and add the bell peppers and red onion to the pan, alongside 2 more tsp of taco seasoning and the water. Sauté to combine.
Let the tofu, bell pepper and red onion cook for another 10-15 minutes, until the bell peppers and onions have softened.
Meanwhile, you can use this time to heat up the flour tortillas if you'd like. I recommend wrapping then in a wet paper towel and microwaving them for about 1 minute to soften them.
Once the tofu, onion and pepper mixture is done cooking, drizzle the lime juice on top, spoon the mixture into a tortilla, top with your desired toppings and enjoy!
Notes
If you like your fajitas a little saucier, feel free to add more water!
