This easy vegan burrito bowl is spicy lime dressing is a great make-ahead option for those busy nights, or for a packable lunch! Spiced black beans, roasted sweet potato and spicy lime dressing come together over a bed of brown rice and veggies to make a delicious, nourishing and satisfying meal.
540mLcooked black beansdrained and rinsed if from a can. About 2 cups
1tspolive oil
1/2yellow oniondiced
1tspsmoked paprika
1tspcumin
1tbspchili powder
2tspgarlic powder
1/2tspchili flakes
1/2tspsalt
Spicy Lime Tahini Dressing
2tbsptahini
2tbspwater
1/2limejuiced
1/4tspsalt
1/4tspgarlic
1tspsriracha
Roasted Sweet Potato
1largesweet potato diced
1tspolive oil
1/4tspsalt
1tspgarlic powder
1tspsmoked paprika

Instructions
Preheat oven to 450 F. Line a baking sheet with parchment paper.
Cook brown rice as per package instructions.
Toss diced sweet potato with olive oil, spices and salt and lay on baking sheet. Bake for 25 minutes, or until fork tender.
Meanwhile, add drained and rised black beans to a large saucepan over medium heat with olive oil, onion, spices and salt. Sauté until heated through and black beans start to slightly fall apart, about 7 minutes.
Make the sauce by whisking together all ingredients.
Once all components are done, combine in with vegetables and toppings of choice and enjoy!
