Vegan burrito bowls have been one of my go-to meals for years. I love that all of the components can be prepped separately and thrown together when you need them. They’re also super customizable, meaning if there are some veggies that you love, add them in! Or if you prefer to make it more or less spicy, go for it! I also love that burrito bowls are super portable, making them a great packable lunch option, just like my Vegan Miso Sesame Tofu Bowl.
This recipe may look like a lot of ingredients, but the majority of them are spices that you likely already have in your spice cupboard.
If you don’t have much time, these vegan burrito bowls are great with some salsa and avocado as a ‘dressing’, but if you have a bit more time, I recommend this spicy lime dressing. It adds an extra spicy kick and some healthy fats to keep you feeling full and energized for longer. Main Components of this Vegan Burrito Bowl
Spiced Black Beans: These black beans are the star of the show. Pleasantly spicy, savory, and packed with protein and iron, these will leave you feeling nourished and satisfied! I also recommend using the spiced black beans on salads, in wraps, and any other recipes your heart desires!
Roasted Sweet Potato: These roasted sweet potatoes add some energizing carbohydrates along with vitamin A and a subtle sweetness. I’ve roasted the sweet potatoes in this recipe, but you can steam or microwave them if you prefer! We also use sweet potatoes in my Vegan Chili Recipe!
Spicy Lime Dressing: This spicy lime dressing really pulls everything together. It relies on tahini as its base, which is an excellent source of healthy fats, iron, and calcium! I paired this dressing with lime and sriracha to bring some heat, but feel free to use whichever hot sauce you like!
Savory Brown Rice: I love to cook brown rice in low-sodium vegetable stock to give it more flavor. You can add spices to your brown rice, such as garlic powder, chili powder, cumin or turmeric!
Veggies: I used romaine lettuce, red onion, and bell peppers for my veggies in this burrito bowl, but feel free to use whatever veggies you love!
Other toppings: I chose to top this bowl with avocado slices and salsa, but a vegan sour cream, cilantro, and an extra squeeze of lime would also be delicious.

Vegan Burrito Bowl with Spicy Lime Dressing
Ingredients
- 3/4 cup brown rice uncooked
- 2 cups shredded lettuce
- 1/2 small red onion diced
- 1 bell pepper diced
Spiced Black Beans
- 540 mL cooked black beans drained and rinsed if from a can. About 2 cups
- 1 tsp olive oil
- 1/2 yellow onion diced
- 1 tsp smoked paprika
- 1 tsp cumin
- 1 tbsp chili powder
- 2 tsp garlic powder
- 1/2 tsp chili flakes
- 1/2 tsp salt
Spicy Lime Tahini Dressing
- 2 tbsp tahini
- 2 tbsp water
- 1/2 lime juiced
- 1/4 tsp salt
- 1/4 tsp garlic
- 1 tsp sriracha
Roasted Sweet Potato
- 1 large sweet potato diced
- 1 tsp olive oil
- 1/4 tsp salt
- 1 tsp garlic powder
- 1 tsp smoked paprika
Additional Toppings- optional
- Salsa
- Avocado
Instructions
- Preheat oven to 450 F. Line a baking sheet with parchment paper.
- Cook brown rice as per package instructions.
- Toss diced sweet potato with olive oil, spices and salt and lay on baking sheet. Bake for 25 minutes, or until fork tender.
- Meanwhile, add drained and rised black beans to a large saucepan over medium heat with olive oil, onion, spices and salt. Sauté until heated through and black beans start to slightly fall apart, about 7 minutes.
- Make the sauce by whisking together all ingredients.
- Once all components are done, combine in with vegetables and toppings of choice and enjoy!
