  • 1 large sheet pan

Ingredients

  • 350 g brussel sprouts quartered
  • 1 large sweet potato diced
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp chili flakes
  • 1/4 tsp salt
  • 1 tsp dried rosemary
  • 1/4 tsp pepper
  • 2 vegan sausages sliced into rounds
  • 1 batch Creamy Dijon Maple Dressing

Instructions

  • Preheat your oven to 450 F. Line a baking sheet with parchment paper.
  • In a large bowl, toss to combine your chopped sweet potato, brussel sprouts, olive oil, garlic powder, rosemary, salt and pepper. Leave your sliced sausage to the side (we'll add them half way through cooking!).

  • Lay the sweet potato and brussel sprouts evenly on the sheet pan and roast for 12 minutes. Remove from the oven, flip the sweet potato and brussel sprouts, add your sliced sausage to the sheet pan, and roast for another 12 minutes, or until the sweet potatoes are fork tender.
    2 vegan sausages
  • Meanwhile, whisk together the Creamy Maple Dijon Dressing.
1 batch Creamy Dijon Maple Dressing
  • Once the sheet pan sausage and veggies are done, remove from the oven and plate! Drizzle about 1-2 tbsp of the dressing on top and enjoy!
