Ingredients

Butternut Squash Mac and Cheese Sauce

  • 2.5 cups butternut squash, diced and peeled about 1/2 medium butternut squash
  • 1 cup diced carrot about 1 large carrot
  • 1/3 block extra firm tofu
  • 1 tbsp olive oil
  • 1/2 cup plant-based milk I used oat milk
  • 6 tbsp nutritional yeast
  • 1 tbsp tomato paste
  • 2 tbsp miso paste
  • 1 clove garlic minced
  • 1/2 tsp garlic powder
  • 3 tbsp lemon juice
  • 1/4 tsp ground turmeric
  • 1/8 tsp nutmeg
  • 3/4 tsp salt

Pasta

  • 454 grams pasta of choice I used bowtie

Instructions

  • Steam diced butternut squash and carrots until fork-tender.
  • Blend all sauce ingredients in a high speed blender until smooth.
  • Cook pasta as per instructions, then combine with 'mac and cheese' sauce, starting with 1 cup of the sauce and adding more as desired. Serve and enjoy!
