Vegan Buffalo Cauliflower Tacos

Ingredients

  • 1 batch buffalo cauliflower wings
  • 1 batch pickled red onions you will have extra!
  • 8 corn tortillas

For the sriracha aioli

  • 2 tbsp vegan mayo
  • 1/2 lime juiced or to taste
  • 1/2 tsp sriracha or to taste

Instructions

  • Preheat oven to 450 F. Line a sheet pan with parchment paper.
  • Make the Pickled Red Onion-You can also do this ahead of time to make them even more delicious! Let sit until buffalo cauliflower is ready.
  • Make the buffalo cauliflower filling following my Buffalo Cauliflower Wings recipe.
  • Meanwhile, whisk together ingredients for the sriracha aioli. Warm the tortillas in a small pan over medium heat.
  • Once buffalo cauliflower is cooked, assemble by placing buffalo cauliflower on tortillas, adding pickled red onion, a drizzle of sriracha aioli and any other toppings you'd like!
