Raddichio, Arugula and Maple Balsamic Salad

This Raddichio, Arugula and Maple Balsamic Salad comes together in less than 20-minutes and makes the perfect easy, healthy side dish!

Ingredients

  • 145 grams arugula
  • 2 cups baby spinach
  • 1/2 head raddichio leaves torn
  • 1/2 cucumber sliced
  • 1/2 medium red onion thinly sliced
  • 1/2 apple thinly sliced, I used Pink Lady
  • 1 cup cooked brown lentils I used canned
  • 50 grams walnut halves
  • 1 tbsp nutritional yeast
  • salt and pepper to taste

For the dressing

  • 1/2 cup olive oil
  • 1/4 cup plus 2 tbsp balsamic vinegar
  • 3 tbsp maple syrup
  • 1 tbsp nutritional yeast
  • 2 tsp dijon mustard
  • 1/2 tsp garlic powder
  • 1/4 tsp salt, or to taste
  • 1/4 tsp pepper, or to taste

Instructions

  • Add all salad ingredients to a large bowl.
  • In a small bowl, whisk together the balsamic, dijon, olive oil, maple syrup, nutritional yeast, garlic powder, salt, and pepper.
  • Drizzle the desired amount of dressing over the salad (I used a little more than half), toss everything together, and serve immediately.
