5-Minute Cilantro Lime Edamame Dip

All you need for this healthy edamame dip is 5 minutes, a food processor and a handful of simple ingredients! We use frozen, thawed edamame as a super easy base and tons of cilantro and lime juice for flavor. What you're left with is a protein-packed vegetarian dip that's perfect with veggies, tortilla chips or as a spread on a sandwich!

Ingredients

  • 2 cups shelled edamame
  • 3 tbsp olive oil
  • 1/3 cup packed cilantro
  • 1 lime, juiced
  • 1 clove garlic
  • 3/4 tsp salt
  • 1/4 cup water plus more as needed

Instructions

  • Cook your shelled edamame, either by microwaving it or adding to a bowl and pouring boiling water on top and letting sit for 5 minutes.
  • Add all ingredients to a food processor or high speed blender and blend until smooth.
