BBQ Sauce

  • 3 tbsp tomato paste
  • 3 tbsp maple syrup or other sweetener
  • 1 tbsp soy sauce
  • 2 tsp smoked paprika
  • 3/4 tsp hot sauce
  • 1 tbsp apple cider vinegar
  • 3/4 tsp garlic powder
  • 3/4 tsp ground black pepper

Pineapple Tofu Skewers

  • 1 block extra firm tofu
  • 1 large pineapple large diced
  • 1/2 large red onion
  • 2 cups cremini mushrooms quartered
  • 1 bell pepper large diced

  1. Whisk together all BBQ sauce ingredients in a medium bowl.

  2. Using a paper towel or cloth, press out any remaining moisture in the tofu block. Cut tofu into 1½ inch triangles. Brush with homemade BBQ sauce on all sides and place in bowl. Let marinate for at least 30 mins, up to four hours.

  3. Once tofu has marinated, place on skewers with chopped vegetables and pineapple.

  4. Cook over medium heat on BBQ, rotating every few minutes, until vegetables are slightly charred and outside of tofu is cooked. Brush any leftover BBQ sauce on skewers, serve and enjoy!

Recipe Notes

Feel free to use whatever vegetables you enjoy and have on hand.

If you don't have a barbecue, you can place skewers on a greased baking sheet and cook at 450 F for 15-20 minutes, flipping halfway through.

If you're worried about the skewers sticking to the BBQ, feel free to place a piece of lightly greased tinfoil on BBQ and cook them on top.
