Miso Florida Orange Juice Noodles Recipe

These Miso Florida Orange Juice Noodles are the perfect warm weather staple! These noodles rely on edamame for plant-based protein, tahini for healthy fats and rice noodles for energizing carbohydrates. The dressing is made with 100% orange juice for a tangy citrus sweetness and miso for an umami kick!

Ingredients

  • 1 cup shelled edamame
  • 2 cups thinly sliced cabbage
  • 1 cup thinly sliced cucumber I used a peeler to make strips
  • 1 cup thinly sliced carrot I used a peeler to make strips
  • 300 grams rice noodles can substitute buckwheat noodles

For the Sauce

  • 1/4 cup tahini
  • 2 tbsp miso paste
  • 1 tbsp minced ginger
  • 1/2 cup Florida Orange Juice
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil

Instructions

  1. Cook edamame as per package instructions. I typically microwave in a small bowl with a few tbsp of water for 2-3 minutes until tender.

  2. Whisk all ingredients for the sauce together and set aside.

  3. Bring a large pot of water to a boil. Cook noodles as per package instructions.

  4. Once noodles are cooked, rinse with cold water. Add all ingredients to a large bowl to combine. Serve and enjoy!
