Easy Peanut Noodle Bowl

This easy peanut noodle bowl is the perfect cold meal to pack in a lunch box.

  • 1/4 packet buckwheat noodles
  • 1/2 cup edamame
  • 1 serving peanut lime sauce Get in my free easy vegan sauces ebook
  • 2 carrots grated
  • 1/2 cucumber grated
  • sesame seeds optional


  1. Put 1.5 L of water in the kettle to boil

  2. Meanwhile, whisk together all ingredients for peanut lime dressing (see note above about getting peanut lime dressing)

  3. Once water has boiled, add edamame and buckwheat noodles to a large bowl and pour water over noodles and edamame. Let sit for about 5 minutes, or until cooked through

  4. Meanwhile, grate carrots, cucumber and whatever other veggies you like

  5. Drain and rinse edamame and buckwheat noodles

  6. Combine buckwheat noodles, peanut lime sauce and veggies in a bowl and stir to combine. Top with sesame seeds if desired
