Easy Vegan Butter Chickpeas

  • 1 tsp coconut oil or vegan butter
  • 1 yellow onion diced
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger minced
  • 1 can diced tomatoes
  • 1 can chickpeas drained and rinsed
  • 1 can coconut milk
  • 1 tbsp garam masala
  • 1 tsp ground coriander
  • 1 tsp ground turmeric
  • 1 tsp chili flakes can be omitted
  • 1/2 tsp salt
  • 1/2 tsp pepper


  1. Melt coconut oil in a small pan. Sauté diced onion, minced garlic and minced ginger in coconut oil until translucent.

  2. Transfer onion, garlic and ginger mixture to Crock-Pot 6 Qt. Cook & Carry Programmable Slow Cooker. Add all remaining ingredients and set to 4 hours on high.

  3. After 4 hours, serve with rice, naan or simply on its own and enjoy!
