This easy peanut noodle bowl is the perfect cold meal to pack in a lunch box.
Put 1.5 L of water in the kettle to boil
Meanwhile, whisk together all ingredients for peanut lime dressing (see note above about getting peanut lime dressing)
Once water has boiled, add edamame and buckwheat noodles to a large bowl and pour water over noodles and edamame. Let sit for about 5 minutes, or until cooked through
Meanwhile, grate carrots, cucumber and whatever other veggies you like
Drain and rinse edamame and buckwheat noodles
Combine buckwheat noodles, peanut lime sauce and veggies in a bowl and stir to combine. Top with sesame seeds if desired
