Vegan Burrito Bowl

This burrito bowl is one of my go-to's when I need to make a quick, easy, delicious and filling meal! The best part of this bowl is that it's totally customizable, meaning you can use whatever you have on hand to make it completely yours!

Ingredients

  • 1 medium sweet potato steamed/baked/microwaved
  • 1/2 cup cooked brown rice
  • 1/2 cup canned black beans drained and rinsed
  • 1 tbsp vegan mayo
  • 1/2 tsp sriracha
  • 1/2 lime juiced
  • 1 handful chopped spinach
  • 1/8 red onion diced
  • 1/2 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder

Instructions

  1. Cook brown rice as per package instructions (I recommend doing this in a large batch so you can have brown rice on hand!)

  2. Steam sweet potato (I typically cook mine in the microwave for 10 minutes)

  3. Drain and rinse 1/2 cup of black beans from their can

  4. Whisk together vegan mayonnaise, sriracha and lime juice until smooth

  5. Add all remaining ingredients in a bowl
