Oatmeal Cookie Energy Balls

These peanut-buttery, sweet and satisfying oatmeal cookie energy balls are perfect for those days when you're running out the door and need to grab a snack or just enjoying as a sweet treat. If you have kiddos who can't bring peanut butter to school, try swapping for sunflower seed butter!

Ingredients

  • 1 cup large flake oats
  • 1/4 cup chia seeds
  • 2 tbsp maple syrup
  • 2 tbsp peanut butter
  • 1/4 cup melted coconut oil
  • 1/4 cup chocolate chips
  • 1 tsp vanilla extract
  • 1/8 tsp salt

Instructions

  1. Place large flake oats in a blender or food processor. Blend for ~5 seconds, until oats are chopped.

  2. Place oats in a large bowl.

  3. Add remaining ingredients to the bowl.

  4. Mix all ingredients together until combined.

  5. Once combined, roll mixture into balls (about 2 tbsp in each) and place on a plate.

  6. Refrigerate balls for at least 15 minutes before consuming.

Recipe Notes

These oatmeal cookie energy balls can be kept in the fridge for up to one week, or frozen for up to six months.
