BBQ Soy Curls
1 tbsp olive oil
2cupssoy curls
1/2cupBBQ sauce
1tspgarlic powder
1/4tspground pepper
Other Ingredients
1headromaine lettucechopped
1/4red onionsliced
3/4cupuncooked riceI used brown rice that I cooked ahead of time
Instructions
Cook rice as per package instructions. In a large bowl cover soy curls with water and let sit for 10 minutes to rehydrate.
Meanwhile, add all Creamy Ranch Dressing ingredients to a high speed blender and blend until smooth. You may need to add additional water depending on your blender- I recommend doing this 1 tbsp at a time until you reach the desired consistency. Set dressing aside.
Once soy curls are rehydrated, drain the water. Heat a large pan over medium heat with 1 tbsp olive oil.
Add the soy curls to the pan with BBQ sauce, garlic powder and ground pepper. Mix to combine and sauté for 5-10 minutes, or until the BBQ sauce has soaked into the soy curls and they've become slightly sticky.
To serve the bowl, add a scoop of rice, romaine, red onion, soy curls and finish with a drizzle of the Creamy Dill Dressing. Enjoy!
