Vegan BBQ Soy Curl Bowl with Creamy Ranch Dressing

Ingredients

Creamy Ranch Dressing

  • 1/2 cup raw sunflower seeds
  • 1/2 cup water plus more as needed, added 1 tbsp at a time
  • 1 lemon juiced
  • 2 tsp dried dill weed
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp maple syrup
  • 1/2 tsp salt

BBQ Soy Curls

  • 1 tbsp olive oil
  • 2 cups soy curls
  • 1/2 cup BBQ sauce
  • 1 tsp garlic powder
  • 1/4 tsp ground pepper

Other Ingredients

  • 1 head romaine lettuce chopped
  • 1/4 red onion sliced
  • 3/4 cup uncooked rice I used brown rice that I cooked ahead of time

Instructions

  • Cook rice as per package instructions. In a large bowl cover soy curls with water and let sit for 10 minutes to rehydrate.
  • Meanwhile, add all Creamy Ranch Dressing ingredients to a high speed blender and blend until smooth. You may need to add additional water depending on your blender- I recommend doing this 1 tbsp at a time until you reach the desired consistency. Set dressing aside.
  • Once soy curls are rehydrated, drain the water. Heat a large pan over medium heat with 1 tbsp olive oil.
  • Add the soy curls to the pan with BBQ sauce, garlic powder and ground pepper. Mix to combine and sauté for 5-10 minutes, or until the BBQ sauce has soaked into the soy curls and they've become slightly sticky.
  • To serve the bowl, add a scoop of rice, romaine, red onion, soy curls and finish with a drizzle of the Creamy Dill Dressing. Enjoy!
