Chocolate and peanut butter is debatably the most loved combination, and for good reason! There’s something about the salty and sweet pairing that makes the most satisfying dessert. I had a hankering for this combination one night, which is why I developed this super easy vegan peanut butter cup recipe!
This vegan peanut butter cup recipe is so easy that I debated even sharing it. Seriously, they take less than 15 minutes to throw together, and after chilling them in the freezer, you can enjoy them within 30 minutes!
If you have chocolate chips and peanut butter, you have all the ingredients you need to make these peanut butter cups. While I add coconut oil to the chocolate to add a little more flavor and help the chocolate set faster (since coconut oil solidifies in colder temperatures), it’s not totally necessary.
If you prefer a more Reese’s style peanut butter cup, feel free to add about two tablespoons of icing sugar to the peanut butter mixture. The icing sugar will make the peanut butter sweeter and slightly fluffier, but to be honest, I actually prefer the straight peanut butter combo!
Finish these peanut butter cups with a sprinkle of flaky salt and your taste buds will seriously be thanking you!

Easy Vegan Peanut Butter Cup Recipe
Equipment
- Mini muffin tin
Ingredients
- 3/4 cup vegan chocolate chips
- 2 tsp coconut oil
- 1/3 cup peanut butter I use natural (only ingredient is peanuts)
- pinch flaky salt
Instructions
- Line a mini muffin tin with mini muffin wrappers or plastic wrap.
- Combine chocolate chips and coconut oil in a bowl, and heat to melt chocolate chips. This can be done in the microwave at 30 second intervals, or over a double boiler.
- Add melted chocolate to the mini muffin molds, filling about 1/3 of the way (approximately 1 tbsp).
- Add approximatly 1/2 tsp peanut butter on top of the chocolate.
- Add more chocolate to the top of the peanut butter (approximately 1 tbsp), ensuring to spread it so the peanut butter is completely covered. Add a sprinkle of flaky salt on top of each peanut butter cup.
- Place muffin tin in the freezer to set for at least 30 minutes to set. Once set, pop out the peanut butter cups and enjoy!
