Listen, I create a lot of recipes. And yes, I love them all (otherwise I wouldn’t share them!), but sometimes I create a recipe that just hits different. And this Vegan Lemon Garlic Roasted Asparagus is one of those recipes. Funnily enough, I wasn’t expecting this recipe to be anything particularly special- Yes, I knew it would be good, but I didn’t know it would be this good. Like, so good that my partner and I ate a whole pan in less than five minutes and still wanted more, good.
This Asparagus recipe is the perfect side when you’re craving something nutritious but that still tastes amazing. Plus, it comes together in less than 30-minutes, so it’s perfect as a weeknight meal! I also love making this recipe during weekend meal prep to serve as an easy veggie side dish throughout the week. You can also make this asparagus in the air fryer- Simply cook it at 400 F for 15-20 minutes, or until the ends start to brown.
The lemon juice, garlic and chili flakes make this asparagus insanely flavourful, but the nutritional yeast takes it to the next level. If you’ve never had nutritional yeast before, it has a savoury, slightly cheesy flavor, even though it’s totally vegan!

Vegan Lemon Garlic Roasted Asparagus
Ingredients
- 120 g asparagus, with ends chopped off
- 1 tbsp olive oil
- 1 lemon juice, split
- 2 cloves garlic, minced
- 1/4 tsp chili flakes, optional
- 2 tbsp nutritional yeast
- 1/4 tsp salt,
- 1/4 tsp pepper
Instructions
- Preheat oven to 450 F. Line a baking sheet with parchment paper.
- Snap or chop the woody ends of the asparagus (about 1 inch from the end) off.
- Toss asparagus in olive oil, the juice of 1/2 lemon, minced garlic, chili flakes (optional) salt and pepper.
- Place asparagus on baking sheet, drizzling any leftover olive oil and spices on top. Space asparagus out evenly, and bake for 20-25 minutes, or until the ends are beginning to brown.
- Once cooked, toss in nutritional yeast and additional lemon juice and enjoy!

Just made it, it is delicious! My mouth is still hot from the chili flakes. I love spicy food. Next time, I’ll get thicker asparagus, for this recipe, I had very thin ones.
